House Dressing

My first job was at a well-loved local pizza joint, Pizza King. I grew up on the stuff & couldn't think of a better place to earn my mad money, so as soon as I turned sixteen I strutted in & filled out an application. A week later I was a proud salad-tossing-order-taking-bussing-occasional-pizza-makin'-girl. I left every night reeking of pizza & covered in flour but relatively happy. Ultimately the job ended in typical teen fashion: I found something better to do so I called in one day & promptly quit. Maybe not the smoothest move on my part, but I did learn the secrets of their infamous house dressing (a glorified ranch).

At Pizza King, when one orders a pizza 9 times out of 10 you'll go home with at least one 35¢ side of house dressing. (The best 35¢ you'll ever spend, in my opinion.) As Lisa mentioned a few weeks ago, Texans put ranch on everything, chief among them, pizza. So, you can imagine the popularity of the stuff. Now it's my house dressing & I slather it on everything from pizza slices to fries to big salads to fried chicken.

House Dressing, makes about 1 1/2 cups
1/4 c. mayonnaise (not miracle whip, please!)
1/2 c. greek style yogurt (you can use sour cream if you like a bit more tang)
1/2 c. butter milk
1/4 c. minced dill
1/4 c. minced cilantro
1 tsp. lime juice
1 tsp. black olive brine
1 clove garlic minced
1 tsp. salt
1/2 tsp. freshly cracked black pepper

Combine all ingredients in a jar. With a fork, fold all ingredients together. Put a tigh fitting lid on, give it a good shake & you're done!

Not sure if they have changed the recipe since I worked there but that wasn't the recipe I made. It had less ingredients
