


2 6 oz. cod fillets
1/4 - 1/2 c. all-purpose flour
1/4 - 1/2 c. all-purpose flour
2 tbsp. olive oil
salt to taste
pepper to taste
1/2 c. tomato sauce
6 - 8 cherry or grape tomatoes, halved
2 cloves garlic, minced

6 basil leaves, chopped


Salt & pepper the fillets then dredge them in flour. Cook in the olive oil over medium-high heat until the crust is golden (about 3 minutes on each side). Remove the fillets from heat & set aside. In the same pan, saute the garlic until fragrant then add the tomato sauce, tomatoes, salt & pepper. Simmer for 10 - 15 minutes until the tomatoes begin to pop. Nestle the cod fillets in the sauce & serve.

I can't keep up with your posts.....
this sounds delicious as do the bacon truffles and the chicken. I have been pretty lame in the kitchen recently and wish I was staying with you two because the food on your table is always so downright goodlooking.
