Baked Sweet Potato with Fried Thyme

Well dear readers, I blew it. Kind of. After prancing around the kitchen for hours last night setting up perfect shots & snapping away I discovered ... wait for it ... no flash card! Blast! Merde! My efforts weren't entirely wasted though. The modest meal I whipped up in between "taking pictures" was delicious. Effortless, unassuming sweet potatoes with fried thyme & oodles of lemon-butter teamed up with a rocket & roasted Spanish onion salad made a lovely simple supper. I have no evidence to prove this, but just trust me on this one guys.

Baked Sweet Potato with Fried Thyme
2 large sweet potatoes
2 - 3 sprigs of thyme
4 tbsp. butter
1 lemon, juiced
salt to taste

Pre-heat the oven to 325F. Scrub & salt the potatoes & place them directly on the rack. Bake for one hour.

Meanwhile, melt 2 tbsp. of butter over medium heat & remove the leaves of thyme from their stems (do this by running your fingers down the stem in the opposite direction of their growth) & toss in the butter. Bring the heat up to medium-high so the butter bubbles & reduces. Add the lemon juice. Once reduced by 1/4 or so, remove from heat & beat in the remaining 2 tbsp. of butter with a whisk or fork.

Split the potatoes & drizzle with thyme & butter.

Oh I love the idea of adding the lemon! I like sweet potatoes but sometimes find them a bit, well, sweet. I imagine the lemon would be perfect for cutting it a bit.
